I was in the mood to make keto Meatpie (the African/ Caribbean version anyway). So I mixed my almond flour and coconut flour with my xanthan gum and sorted my fillings (I used bacon cubes, chicken strips, courgettes and spring onions)

Unfortunately, when the time came to roll my dough into circles for my Meatpie, it kept cracking. I eventually gave up and used my dough to make crust for my cottage pie lol.

Luckily for me I had grated cheese and single cream so I used that to make the top of my pie. It came out very well. So although I don’t have snacks for the week, I have a staple for the week.
