Of the many vegetables I have gotten to fall in love with – aubergine is not one of them. Now granted, I would use them in casseroles or bake them or use them to eat my soup when the need arise. I however decided to use them to make soup yesterday.
I bought aubergines and I used it to make soup the same way I make my traditional soups – the only difference was that I added in my boiled and blended aubergine to the mix. I am yet to eat it but I did taste it and it tasted amazing.
I am definitely doing this again.
