Had not bought cauliflower in a while cos for some reason it had been scarce and expensive. Well I caved and bought one yesterday and like I always do, I riced it, squeezed out the excess water and stored it in my fridge. I have noticed that it tends to stay fresher for longer this way.

Anyways, today I decided to make cauli fried rice.  The thing with keto meals is that some vegetables are not considered keto compliant – hello carrots and corn. So behold my cauli fried rice.

I did garnish with avocados and 2 chunky ribs…
